- 400g falafel mix
- spray oil
- 4 cups shredded iceberg lettuce
- 4 small tomatoes, sliced thinly
- ½ red onion, thinly sliced
- 1 avocado, thinly sliced
- 4 wholemeal wraps
- 200g low-fat plain yoghurt
1 With cold wet hands form small balls from falafel mix. Spray a heavy-based pan with oil and cook balls for a couple of minutes on each side. Set aside.
2 Arrange lettuce, tomato slices, red onion and avocado on wraps. Top with falafel balls and yoghurt. Roll and serve.
